2007 Cabernet Sauvignon "Red Capsule" 2007 Cabernet Sauvignon "Red Capsule"

Diamond Mountain District, Napa Valley (45 cases produced).  For our second wine of the acclaimed 2007 vintage we once again utilized grapes from our cool Creek-side vineyard.  Based upon the instant success of the 2006 “Red Capsule” our winemakers agreed that the fruit from this particular terroir was ideally suited for the production of a lighter, more approachable Diamond Mountain Cabernet.  The grapes were harvested on a foggy Monday morning in late October,  and immediately taken to the hand sorting tables where imperfect bunches were discarded.  The remaining fruit was then crushed and the long, unhurried fermentation commenced.  Following the completion of the fermentation process, the wine was placed in fine French oak barrels (50% new and 50% from the previous vintage) for an extended maturation of some 20 months prior to bottling in June, 2009.   The resulting wine has exceeded our expectations.  The color is that of sparkling garnets in a glass bowl.  The aroma reflects the minerality  of its Diamond Mountain origins.  The mouth-filling flavors are classic blackberry, currant and cedar, a complexity well supported by the structure of the ripe tannins on the finish. This wine is ready to enjoy now and over the next 5 years.  It’s at its best when decanted one hour before serving.

2007 Cabernet Sauvignon "Black Capsule" - SOLD OUT

Diamond Mountain District, Napa Valley. This wine is our signature Cabernet made exclusively from selected grape clusters from our shy-bearing Hillside vineyard. To create this wine we once again turned to St. Helena winemaker Mike Smith whose considerable skill resulted in our very well-received 2006 vintage "Black Capsule" Cabernet. The grapes were harvested in the cold, misty early morning hours of October 22,2007. Fermentation was begun using only the natural yeast produced by the grape. Upon the completion of a slow, unhurried fermentation the wine was placed in new Taransaud and Seguin Moreau French Oak barrels where it rested in the quiet cool cellar for the next 20 months prior to the bottling in June, 2009. The resulting wine is a jewel with a deep ruby color finishing to the edge of the glass and an elegant aroma of subtle notes of lightly toasted oak, spice box, and new leather. The complexity is manifest by flavors of black cherry, cassis, blackberry, dark chocolate and pipe tobacco presented with a velvety mouth-feel enhanced by a long finish balanced by the supple ripeness of the rich tannins. This is truly a special occasion wine.

2006 Cabernet Sauvignon 2006 Cabernet Sauvignon "Red Capsule" - SOLD OUT

Diamond Mountain District, Napa Valley (75 cases produced). For our second wine of the 2006 harvest we decided to utilize the grapes of the Creek-side vineyard to make a lighter style wine  which would compliment the al fresco style of living and eating in the Napa Valley.  For this project we selected the excellent winemakers at Judd’s Hill Microcrush who have long had the reputation of making high-quality drinkable wines.  Following fermentation in early November 2006, the wine was aged in french oak for over 18 months until bottling in May of last year.  The resulting vintage was exactly what we sought.  The wine has a rich garnet color, a youthful fruity nose with hints of blueberry and currant which expand through the palate giving way to ripe plum and spice flavors which persist seamlessly through the lingering finish.  This wine is the perfect compliment to a well-prepared meal.
